There are many sources with recipes for healthy eating. I’ll give you the ones I eat consistently, which are easy to make. Use organic products whenever possible; then, you don’t have to worry as much about pesticides, especially on the peel. There are no exact measurements because there can be many variables, and for these recipes, it’s okay to wing it.Whole-Kernel Bre
I like Mestemacher Organic Three Grain, which I toast and top with nut butter, honey, or low-sugar jam. It keeps me energized for hours. On weekends, I love smoked salmon.
My daughter gave me this tip: Keep the nut butter in the refrigerator so it will spread less fast on the hot toast.
Easiest Brussels Sprouts Ever
- Preheat oven to 400°F
- Use as many as you want to eat, trim the stem end and cut in half
- Toss in olive oil and salt, enough to coat well.
- Place cut side down on a baking sheet and bake for 8-12 minutes or until easy to pierce. Some loose leaves can burn. (Test a medium-sized one, not very small or very big. Do not bake until mushy.)
- Remove and toss with balsamic glaze or a mixture of apple cider vinegar with honey.
You can also bake small, evenly-sized broccoli florets this way with as much sliced garlic as you like. When they’re out of the oven, sprinkle them with grated lemon zest and parmesan cheese. You can replace lemon juice with the zest, but it makes them a little less crispy.
Kale Salad That Packs A Punch
Salad
- Remove the ribs from a whole bunch or two of Kale.
- Roll two or three leaves together tightly like a cigar. Then, slice very thinly like a carrot.
- Slice at least 5 to 6 stalks of scallions or more, depending on how much kale you have. You want a lot.
- Add a handful of craisins or raisins to the bowl. Add chopped nuts, preferably soft ones like walnuts or macadamias.
Dressing:
- Mix about a quarter cup of freshly squeezed orange juice with about a tablespoon of olive oil and a teaspoon of lemon juice. Add honey, a small spoon of mustard and some orange zest if you have it. Salt and pepper to season.
- Toss the salad a lot to break down the Kale and incorporate all the ingredients.
Apple Or Pear Crisp
- Preheat oven to 350 degrees.
- If possible, cut up apples or pears without peeling. Make the pieces about the same size. Mix in a little sugar and lemon juice. Put that in a baking pan.
- In a separate bowl, mix almond flour and wheat flour in equal measure.
- Add some oats, chopped walnuts, a little cinnamon, and a little more sugar (or whatever sweetener you prefer).
- Add enough diced cold butter to form a wet paste or crumble substance.
- Distribute evenly over the fruit mixture and bake until the fruit is soft and the top is golden brown. You get bonus points if you serve it with yogurt.
